Olive bread


Enjoy authentic Greek flavors using our Notis Family® extra virgin olive oils


  • 1kg flower
  • 20-30g fresh yeast
  • 400 ml water (a little less than 2 cups)
  • 100g olive oil
  • 15-20g salt
  • 40g sugar
  • some oil for spreading
  • olives pitted, cut slices


  1. Dissolve the yeast in the water well. Add the sugar and salt and olive oil. Put the flour in a small bowl and make a puddle. Pour medium water which dissolved all other materials.
  2. Slowly begin to stir and finally knead until our dough is ready. It shouldn't stick to your hands and there should be no lumps, nice elastic dough.
  3. Give it a half an hour to rest and rise, then cut all small ball size olive or small walnut. (those with inflating take appropriate size as shown) in the small round forms, or that we have, we lay a baking paper and pour a layer balls zymarenia.
  4. On top pour a few olive slices.
  5. Again and again pour flower balls and again olives. Olive quantity depends on our taste.
  6. Grease top end and leave to rise in a warm place.
  7. Bake 20 minutes at 220℃.
